Wine Cask restaurant in Santa Barbara opened up its kitchen and shared some special holiday recipes. In honor of Thanksgiving, Pastry Chef Rosie shows us how to make chocolate bourbon pecan pie!

Chocolate Bourbon Pecan Pie--

Ingredients:

Sweet Dough (shortbread Cookie)
-3 pounds of butter
-24 oz sugar
-1 cup egg yolks (about 6)
-4 pounds of flour-sifted

Creme butter, salt and sugar until combined. Slowly add egg yolks to combine. Add the sifted flour and mix.

Pecan pie--
-3 eggs
-1 cup sugar
-12 T butter melted
-1 cup corn syrip
-1/4 Jack Daniels
- pecans
- chocolate chips optional

Whisk together sugar and eggs to combine, add butter corn syrup and Jack Daniels. Place pecans and chocolate chips in the bottom of of pan and cover pie filling. Bake at 325 until set

Cupcake Base

-12 eggs
-68 oz sugar
-37 oz butter
-54 oz flour
-2 oz baking powder
-1 oz salt
-20 oz buttermilk
-20 oz sour cream

Creme butter, salt, and sugar. Add eggs slowly. Sift flower and baking powder , alternating with the buttermilk and sour creme.
